Carrot Cookbook by Laura Sommers 
Because we shop at the club store we get about 5 pounds of carrots and have to use them up rather soon. I was thinking of just dicing them up after peeling and store in freezer.
There's still so many left. This book has so many recipes I can't wait to try, especially zuchhini carrot muffins. Love carrot cake also. I have all the ingredients and hope to bake this weekend.
Book starts with table of contents where recipes are listed, not in any order.
 Short intro about carrots and health benefits they have.  Fiber and beta carotene are among some of the vitamins, a, c and k also. a super food in my opinion.
Soups, slaws, muffins, cakes, salads, casseroles, and even cookies to name a few.
Each recipe starts with a title and has a list of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
There are NO pictures and there are a lot of ingredients be sure to have them all lined up before you start.
Directions are given and there is NO nutritional information. I have no problem substituting for healthier finished dish.

TOC where recipes are listed as Entrees and sides. Intro discusses Southern kitchens and the delights they create.
Each recipe starts with a title, NOT always at the top of a new page, list of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
There are a lot of ingredients, be sure to have them all first.
Directions are given.
There are NO pictures, NO nutritional information and a lot of cans with sodium in them, rather than fresh. Lots of fried foods and butter.
Bonus  recipes included at the end. Great for Sunday socials and family gatherings.

Interested more in budget section rather than losing weight.
 TOC where chapters are listed, about the author and intro discusses a new movement who are unsatisfied with their lives and this plan can help you get what you need.
Foods listed that will help get rid of belly on a budget, what they are and how they work.
Love the list and have used them in the past, not every day and the method he talks about but it really makes sense.
We eat about 90% of the foods mentioned but it's nicer to know how it effects our bodies in a good way.
Book also includes ways to keep  the fat off, how and why, list of resources and conclusion as a summary are listed at the end.
