This book starts with TOC where recipes are listed as meal snd food categories.

Intro discusses many aspects of RV cooking and equipment and utensils you should have on hand.
Cooking and food safety tips are also included. Each recipe starts with a title, servings, prep and cook times.
List of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
Directions are given and some nutritional information per serving: calories, carbs, fat, protein sodium.
Some contain a lot of ingredients be sure to hae them all first, but otherwise most have 5 ingredients or so.
Lots of ideas even for cooking at home.
Author requests a review, other works by the author, conversion tables, grilling times, cast iron cooking,  foil packet meals, are all listed at the end.

What I like righty from the start is the variety of different authentic foods from countries I've never been to.
Contents lists each volume by their name: Mexican, Polynesian, Indian, Thai, Korean, Vietnamese.

This book is deceiving as it only contains volume 1, Mexican although it does show the other books in the volume they are NOT included.

Some use a different format totally and contain nutritional information Calories, total fat, sat fat, cholesterol, total carbs, sugar, fiber, sodium, potassium and protein, this makes me think the recipe is not from the authors collection but somebody elses.
