 TOC starts this book where recipes are listed, not in any specific  order Common abbreviations chart is included.
Intro discusses all about tofu, nutritional powerhouse,  tips on keeping it fresh and about secrets and taste.
Each recipe starts with a title, List of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
Directions are given  and servings, prep and cook times and total time and some  nutritional information:
calories, fat, carbs, protein, cholesterol and sodium based on 2k calorie diet.
There are NO pictures and some contain a LOT of ingredients, be sure to have them all first.
There is a lot to choose from for every meal of the day.

List of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
Some contain a LOT of ingredients almost 3 pages worth, directions are given and some nutritional information per serving: calories, magnesium, total fat, sat fat, calcium, cholesterol, carbs, sodium, fiber, sugar, protein, vit A, C and folate.
Some contain a tiny color photo hard to see what the item is. Some do NOT even have nutritional information at all.
Ends with summary of this book.

Starts out with intro and discusses what it is and the symptoms, foods to eat and avoid.
Meal plan is included depending on diabetes you have.
Each recipe starts with a title, summary of the dish, tiny small color picture but you can't tell what it is, prep and cook times and servings.
List of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
Some contain a LOT of items, be sure to have them all.
Directions are given and there is some nutritional information-per servings  size: calories, sugar, fiber, sat fat, calories from fat, fat, protein, carbs, sodium, and cholesterol.
Also diabetic exchanges: starch, lean meat, fat, and vegetable.
Recipes do NOT always start at the top of a new page.
Ends with summary and other links to get more recipe books.  I could not access the links.

Some nutrtji9onal information contain: calories, total fat, sat fat, total carbs, net carbs, protein, sugars, fiber, sodium and potassium which leads me to think these are from a totally different source or all recipes would have this listing.
14 day meal plan is included at the end along with index.  There are NO pictures.

Each recipe after that contains a title and summary of the dish. List of ingredients and you should be able to substitute for your healthier dietary needs: low fat, low sodium, low sugar and fresh vs canned items.
UK measurements are listed and directions.  There is NO nutritional information but as discussed prior you need a lot of protein to be doing physical labor.
Some recipes have a lot of items, be sure to have them all first.  Like soups as  I can make them now to enjoy. Cereal bars seem a bit appealing, for our hikes.
Recipes do NOT always start at the top of a new page. Canned cranberries actually only lists blueberries as the fruit. hmmmm.  
Do not like to keep converting recipes from UK to US, some are in US.

Some have a LOT, make sure to have them all first.
Directions are given. NO servings, in some recipes. NO pictures and NO nutritional information.
500+ recipes. Not sure what spice corn feast is considered; holding patty is another; early colored sugar,  baking pop, is that powder?  entire milk? .
Also sections on buying frozen food and using air fryer to cook/reheat them.
Lot to think about in this book.
